1968 Resto-mod Wheel Size

Doing my 1968 Coupe that I've been holding onto for 20 years. Putting in 5.0L EFI from 1989 convertible, 8.8 5-bolt rear end w/ disc brakes & 3.73 gears from later mustang. Body shop will be installing rear end soon. Wasn't planning on making wheel choice this soon but 14" won't fit. Really want to go with the biggest wheel I can get to fill the wells and make a slightly more modern look. Read this article but concerned about rolling the fenders since engine, interior, etc. all stripped out of car. Body guy suggesting 16" wheels. Really want 17" bullitts that can be found pretty easy. Anyone done this and will it fit without rolling the fenders? Not sure on tire size yet. Would like to find a set of used tires and rims to keep it rolling until everything is in but don't want to waste $500 on rims that will be too big. shackles and bushing I purchased will raise the rear end 1".
