Help With Replacing Differential Bearings

My 06 has a noisy rear end. It has no abs and is the open 7.5. I have not opened it up yet but I am pretty sure the noise is coming from one or both of the bearings on the differential. I have narrowed it down to these bearings as the noise is still there.. while coasting. I am pretty sure it would go away with all power removed if it was related to the pinion or gear set.
I am talking about the diff. bearings that the inboard end of the axle rides on. My question is.. can I pull the axles and remove the diff. keeping track of the exact position of caps, and shims. Then replace just the two bearings and put it all back together without having to have it "set up" again? I will replace wheel bearings and seals also since I have to remove axles anyway.
Lots of backyard experience but always happy to gain education.
