The height of your tire is what you need to know provided your rearend gears are stock.
You can buy 17" tires in different heights and widths and they could be close to your original tire height or way off.
Also there are several different ratio t5s.
The easiest thing to do in my opinion is if you have a gps unit that measures your speed use that to compare with your speed on the speedometer and adjust your gear from there.
A speedo gear with less teeth will show higher speed on the speedo and vise versa.
Also...you swapped a 289 for the original I6 motor but kept the stock rear end? I'd seriously consider getting either an 8 or 9" rear end on the car first before you go crazy with speedometer gears. Those 6 cylinder rear ends are very light duty.
For what it's worth, I have a 302, T5, 9" rear with 3.70 gears, 235/60R-15 tires and went with a 21 tooth gear
