    Carb dry sounds like you are running out of fuel, ie. the fuel bowls are emptying faster than the pump can fill-em back up again. Check the float levels to make sure they are filling to where they are supposed to be..... and maybe check fuel pump function. Just becuase it's a Carter fuel pump...

    headers I beleive these guys sell headers for this swap, www.fordpowertrain.com expensive headers, but they fit well, and are probably the best headers on the market for your Ford, no matter what model you have.
