I own a 1997 3.8L V6 Mustang and It seems to be having trouble getting up to speed from a dead stop of I drop under 20 I'm thinking it might be the Spark plugs but I don't want to by something I might not need

How old are the plugs and wires? That's usually a very good place to start if you have a stumble and they are of unknown age.

Any codes or check engine lights?

Unless you now they are new change the air and gas filters and the plugs and go from there.

Just for diagnosing your issue. You could pull the spark plugs, inspect them for damage or if they are fouled. Clean and re gap the plugs. Inspect the plug wires, check fuel pressure etc.

By trouble you mean you have to give it more throttle than you used to or the rpms are high and it takes the car a while to actually move?

Could be like me and have a partially-blown headgasket. Barely any smoke but coolant is mixed with the oil(creamy oil) and coolant comes out the exhaust.
Still runs and drives but lacks power. Replacing my gasket now.
