After I removed the restrictor plate from my 2002 mustang v6 I noticed everytime I shut the car off I hear water going through pipe sounds and the fan buzzing. What could be causing this?

Also is it worth for me to put a cold air intake on a v6 auto?

The only thing I have done to it so far is dual magaflows.

Electric fan takes a few seconds to spin down.

Water bubblings is coolant in the heater core. I've heard it in several Mustangs, including my own
