"Just bought a mint 93 Notchie" 351W in near future

Hey all you Ford gear-heads! I'm new to this forum. Got a project on hand. I have a 74 Windsor block (prepped) & a 85 Windsor block (prepped) but question is D.S.S states that their blocks are later models used due to them being 1 piece rear main seals. Should I do way with these blocks? & just go with their 408 Super Pro Bullit Level 20 shortblock & go from there? My baby is "Wild Strawberry" in color w/ a pristine black interior (4-banger). My plans are an ultimate 351 stroker (408/410 cid). Vic.Jr. Heads/Intake,Race Demon carb,9 in. rear with 4.10's or 4.56's,(Hence, I already have the new Tremec TK-600)....& a NX-Express kit. Any advice will be greatly appreciated ok guys...& by the way, I'm a Ford man since birth. This is my 4th Fox-body and I'm keeping this one 4GOOD!! You guys may want to slap the taste outta my mouth but I sold my soul to GM in 2002 and bought a WS6 Trans-AM..(worst mistake of my life)..but I'm back to my roots now..& lookk forward to staying in touch with all you guys.. Thanks for the advice sir..So my 74 block is ok to start my project off with? I will be utilizing a main girdle as well. But should I also try to incorporate my own "Level 20" design with the screw in freeze plugs or will this be overkill? Reason being sir, is that I'm trying to build a rock-solid streetable motor that can withstand some rigors @ the track ocassionally as well..With scheduled oil changes etc. Hey!(Had to sell the cheaply made WS-6,things started breaking bruh)

Ok, Thanks Mr. Jerry sir...I'm gonna try to post photos 2morrow after i wash it. Escuse me but does anyone know of the best do-it-yourself spray that I can possibly use to bring back the luster to the black around the window moldings?...I'm so anxious to get started.. & I'm so happy to be part of this forum with you guys..
