I believe most verts came with leather seats - and Latemodel Resto and others can get you leather seats..

buy a nice set of leather seats from a 94-2004 they bolt in you sit 1" higher and just about everyone has done this. if you want to stay stock then buy cover as mentioned above

the rear seat will need to be covered or you need to find a vert bottom and top

Completely doable. All you need to do is set aside a day out of your weekend & go at it. A couple of things to look at besides just the upholstery is seat foam & seat frame.

Is your seat foam is compressed, worn, torn, or in some other state of disrepair? You'll want to either have some extra foam on hand to build it back up or buy new to replace it all together.

Does your driver seat have the gangsta lean? If so you'll need to arrange to have the broken seat back repaired.

Here is an overview of seat upholstery installation. It's on an 86 hatch, but you'll get the general idea.
