stock fuel rails, stock fpr, stock MAF,19# injectors, 65MM TB, and 155 LPH fuel pump?

Basically freshening a stock 87 5.0 with new bearings, rings, and a TMOSS intake.

The parts listed above are what I have on hand. I just wanted to make sure it is ok and that combo won't f*$k anything up...

Ehhh.... I would ditch the stock 55 MM MAF for a larger one, say around 70 MM. That is a huge bottleneck. You have everything else upgraded, why not upgrade that tiny MAF? Find one off of a 94/95 Mustang GT.
