usually a shop wont skimp on parts like these unless you tell them to and then they'll look at you like you are stupid. are you boring the block or just just having the walls honed? unless you are boring the cylinders out you can still use the stock rings. FWIW pay them to do it. they usually dont charge that much and its that much less you have to do when you get the thing home.

You normally need the shop to change the cam bearings so you are going to get those there also.
If the shop is going to grind the crank, get them to furnish the main and rod bearings, so you have a better chance of getting the right size. I would check them anyway.
You normally wait until the shop has measured the bores and crank and decided what it has to be bored to and turned to before buying bearings or rings.
