What are you doing when you stroke an engine? How does it benefit it?

making the stroke longer via different crank.

Like 96BluOvl said, It extends your stroke via the crankshaft. You benefit because you get more cubic inches by doing this. This is usually done along with a bore (hence boring and stroking an engine). Increased displacement = Increased horsepower. Also, you will usually put in a forged crank/rods/pistons when doing this, which enables your bottom end to be stronger and hold more horsepower.
