Water Temperature?

Hello All, I own i 87 GT and was wondering what the water temperature should be? It has a water temp guage which is why i was wondering. Mods to it are that gauge, lowered 1.5", racing tach, ram air hood, racing clutch, no cats, h pipe, and dual flowmasters. Has around 160k on it. Its my daily driver but i don't drive that much, usually just to and from work (about 8 miles each way) every day and the temperature runs around 180-190ish, and i drive it real easy since its so hot outside(southern indiana, its been high 90's with heat index over 100). Yesterday i was in the bigger city near where i'm from and was driving around with a buddy for about an hour or more and was driving it a little harder, and the temp went up a little over 200, maybe 210ish. What should it be running? I don't want to overheat or tear anything up. Thanks for any input.

If I remeber correctly the stock T-stat is 197 degrees. so 200-220 is nothing to worry about in this heat and in traffic etc.

180 is the ideal operating temp for these cars. factory is about 195. i wouldnt worry about 200-210 as long as it didnt get any hotter

180-210 is about normal. I would be worried if it stayed above 210 for extended periods of time.

Ok thanks everyone, i just wanted to make sure it wasn't running too hot
once i got on the highway to come home and it was at a steady 65 it cooled down a bit so it wasn't staying hot. So i was worried about nothing. Thanks for the input
