    Well you can always drill it out instead of using the easy out. Just use a bit slightly smaller then the bolt so you don't damage the threads.     This just happened to me with a water pump bolt in the block. We used an easy out on it but we did it very slowly and took it easy with it. We managed to remove the bolt and now life is good again. Like they said above you don't want to break the easy out in the head.
