I always loved the Hydros.
Here is a pic of my '86 Glastron-Carlson CVX-16. I put a 150hp Johnson V6 on it.
Its always more fun on the water when you have a big Johnson.
First, never buy a car from a friend. Especially if you want to stay friends.
Second, now that you already did it anyways, I would confront him as to why the car doesnt have any of the stuff he told you it did.
I am planning a complete restoration of it. It should be an easy one since it is out of Texas. The car doesnt have one panel on it that will need to be replaced before paint. No rust at all.
I even have the original decal kit that goes on the car.

Check the floors. And I dont mean just look at them from underneath. The floors would tend to rust from the inside out from leaking weatherstripping which means they could look perfect from underneath but be literally paper thin from rust inside. Pull back the carpet to have a good look at...
No offence but you said it was an '85-'86 interior which is incorrect. You were correct in pointing out that the interior (seat portion) was not correct for the year.
Whoever gave you that info is incorrect. All the interior with the exception of the seats is mostly original to the car. The seats are from a '90-'91 mustang. If the seats were older they would have the bigger headrests, if they were newer they would not have the pullout leg supports...

I think that '82 GT is worth $1000. I think if you could get it for $800 or so then you would be getting a pretty good deal. If you want the original steering wheel for that car then I could use the svo one on...
