I have the 67. I am in the process of getting a 2000 GT. I am going to swap as much off the 2000 as possible. Has anybody done anything similar? Any advice? Thanks in advance.

go with an AJE k member, narrow and reinforce your shocktowers, you can use the suspension, brakes, hubs, steering everything from the 2000, then you need a T5 crossmember, and put spring perches in the right spot on the rear end, shorten the driveshaft and steering column. boom. done.
id also recommend going with a painless wiring harness.. instead of cutting and splicing and rigging the 2 together.
