I tracked down a video of the problem I am having. This is not my car but mine does the exact same thing, only mine will be so bad that it will occasionally die. It is driving me crazy. Mine does it regardless of whether the air is on.

i would start by cleaning your IAC(idle air control) see if the conditions improve.

Mine started dong the exact same ting but only every now and then like once every two weeks. I suspect either issues with the accufab TB or more specifically the TPS since I didnt set it with a meter.

I have cleaned the IAC and that helped a little. The IAC is only a year old. I haven't even thought of changing the tps, maybe I should. I hope its not a tb those are expensive, likewise for the MAFS.

The same week I got rid of my gt it did just that but worse, and it would die and with no ac on,thought id change the plugs, even tho I just changed them less than a year ago,and BOOM that fixed the problem other than that I try what everyone else says.

My old 89 GT vert used to do something very simular to that. You would pull up to a light and push in the clutch and it would idle up and down, and like you said ocasionaly you thought it was going to quit. I never got it completly fixed, but I got it alot beter. I got an ohm meter and set the TPS (I think it was been long time now) I never got the ohms exactly correct but did get close so I think the switch was KA-put but never bought one.

its the iac. tps wouldnt really do it unless the throttle was being moved around alot.

Def looks like a problem with IAC, it shouldnt be the TPS unless you have messed with or its an aftermarket throttle body.
