You should not be flooding with that carb if you are talking about the engine that is listed in your sig. With those kind of mods you should be good to go with that carb right out of the box. I'd be looking for problem with the carb such as float level or if you are running an electric or performance mechanical fuel pump then I would check the fuel pressure at the carb. You should have a pressure regulator with those pumps to regulate the pressure to around 6 psi otherwise you'll be forcing fuel into the fuel bowl and the float can't hold it back. I don't think I'd go down to a 500 cfm carb when running that RPM airgap, those heads and that cam.

tos is right, you have an issue other than too large a carb. too much fuel pressure, a bad needle and seat, too high a float level, these are things that can cause flooding.
