How do I measure piston dish?

I recently bought a Jasper rebuilt 351w. It is bord 40 over. It was a complete running motor with intake, carb, exhaust manifolds, and accesories. It is in gereat shape, and I would like to add a H/C/I package to it. My question is how to measure the dish in the pistons so I can get an accurate tally on the compression. I tried calling Jasper, but the sreial number has been reused on a Chevy for Christ sakes, and no info is relevant. Please help a brother out.

without taking it apart? I don't know that you can...

with a head off, and engine tilted so piston tops on that bank are level, bring a piston to top and use a syringe calibrated for cc to measure diesel fuel into the dish until the piston appears flat when viewed at a sharp angle.

The engine is on a stand in my garage. I would like to try this. WHere can I get a syringe like the one needed?
