how do you change the clutch cable on an 01+ GT mustang?

You're going to have to get a Haynes or Chilton repair manual, and follow the instructions inside it for removal/installation of clutch cable assembly. I doubt anybody will happen to remember step for step how you go about doing it 
If you do a search on google, or perhaps here at SN, you may find a how-to on an aftermarket cable assembly installation, which may help you some. Good luck!

Disconnect it at the clutch quadrant, unbolt the bracket in the engine compartment, and disconnect it from the trans. Pull it out.
Put new one in.
Should take about 10 minutes.

good one Lee... but not everyone works on mustangs all day 
for the newb to the clutch cable on a GT, as i was, it will take about 45 min... would have taken me less but i was fumbeling with getting the needed tools.
remove the lil cover under the car that shrouds the engaguement fork.
with a LARGE C clamp (same on i use for my brakes) compress the fork to release the tension on the cable.
go inside the cabin, remove the cable from its catch on the quadrent.
under the hood, locate the cylindrical guide that attaches to the firewall (mine had two screws holding it in, was in plain sight, and was the only thing WITH screws and a tube comming out of it from the firewall in the drivers side) then remove it, pull the cable out.
follow the cable deeper into the bay with a flashlight, locate the fender hold down plate. note its location
go under the car and remove the bolt that holds the plate.
reach back and remove the clutch cable fromt he fork and then slip the cable from the engine bay.
reverse steps to install
also, i'd get the steeda adjustable cable... i ordered the OEM cable, and got the steeda instead (COUGHLEECOUGH) but am very happy with it, and it can help vastly when the cable stretches, just adjust it a bit more... proves to be longer life of the cable... well... till it finally brakes

its easy. All you do is get the car up on ramps. look on your trans. for a aluminum box cover and remove the bolt holding it on. Then you will see the fork with the cable attatched. pry the fork forward, and discont the cable. Just follow the cable up to the quadrant and remember how it was routed. Its not hard at all, I have faith you can figure it out with out a haynes
