the stock pulley is on there pretty tight... couldn't get it off with an impact gun. I heard it's only worth about 10% of your total gains from pulleys anyways so I left mine on...

You can try leaving the belt on and using a breaker bar on the alt nut. That's hit or miss though. An impact gun is the quickest.

Don't even waste your time trying to do it without an impact gun. Simply remove the alternator and take it somewhere like snoozer said if you don't have an impact gun. I've had all three pulleys on my for over 4 years, and I used the stock belt. I'd do all three, you will not have any charging issues. I had a 600watt crossfire amp hooked up to a 12" RF sub, in addtition to my mach 460 stereo back in the day, and I never had any issues with a dead battery. Heck, I just replaced my stock battery this past summer.

You've probably heard that from fox body owners who have weaker alternators than us. I've been running the ASP 3 piece pulleys for about a year now on stock belt and no problems. Lights get a little dim while stopped, but after you get rolling everything goes back to normal.

Yes, the lights will dim at idle, but at ~900rpms you'll have full charge.
