Holy smoke this is some seriously good bread! The inside (crumb) is so fluffy and light. This will pair excellently with a nice smoked brisket.

Dang that’s good stuff.

I'm cooking burgers on the Holland this afternoon. My father in law gave me a side sear for it the other day! I'll be breaking that in with the burgers. I'm cooking some onions on the trusty old char-grillet. Broke out the BBQ Dragon to get the coals going.

It’s a real common recipe for brioche.

About 4 cups of bread flower, one cup of butter, 1/4 cup milk, six large eggs, two teaspoons of kosher salt and a packet of yeast.

It’s a little involved in the making process.

I’ll make the dough the night before the brisket is ready, throw it in the fridge overnight, then bake the loaves at about lunch time on Saturday.

You got one of those little fans for your charcoal chimney, you like it?

Yeah, I like it. As far as charcoal chimneys go it works really well. Again, it was a Christmas or birthday gift. My family apparently likes to give me things that help me cook them food.

My only complaint with it is the same one I have with all charcoal chimneys. I never feel like I can stuff enough charcoal in it for what I want to do. This time it worked out just right.

I’m thinking of trying the bread recipe with honey instead of sugar, any thoughts on this?

I like making buttermilk biscuits for breakfast on the weekends. A lot of recipes use honey in them. I made some yesterday that called for sugar, so I used that. After though the wife and I agreed that honey would have probably been better.

I say go for it!

Ok, so this is not technically a grilling post..........ok, no grilling involved.......

Doing something simple, smash burgers again with the sliced onions. I have to cook inside because it’s pissing down rain today.

The different thing, obviously, are the eggs. I also used some of my botg to help toast the buns.

Here’s the burger just prior to shoving it down my face. The egg is an excellent addition.

Next time I want to roast some ancho (or similar pepper) and put that on the burger.

I‘m looking to buy a kitchen aid mixer. I want to make my own brioche buns.
When I was last shopping for my cook, Kitchen aid makes basically two mixers. The one with the tilting head has been downgraded to plastic gears. The one that raises and lowers the bowl for a fixed head is not as convenient, but is still the real deal tool. I would not want to get entangled in the bread hook, even if it is not as big as a restaurant monster mixer.
Edit, it looks like I was very behind in this thread.

So after they are stunned or electrocuted, do you have a plan for more grilling? Is that enough Nope! for wild turkeys? If they hop the yard fence, the Kaiju size birds could be a problem.
Last fall our cockers decided tomatoes are yummy. I am looking at chicken wire at the minimum for our raised beds.

Unless you have one of Bill’s Maine Coon cats or a bobcat, the lab and pit better team up for the turkey crews that wander this neighborhood. The year old Toms like to taunt and try to bully traffic during the day, and yell at us Over the chain link fence in the evenings. I would have had one for Thanksgiving, except for the two mile zoning radius and scaring the neighbors. I could not get one to quietly walk into a freezer in the garage this year.
I cannot find any close pics at the moment, but they should be out of their winter hiding soon.
8000 v should discourage anything rational, reasonable or spookable.

The Pit could do it by herself. It's calling her off that becomes an issue. She gives zero s when it comes to impolite critters on her turf. The Canadian geese learned the hard way. The turkeys so far, have not hung around to await her arrival or tried [bowing up] on her.

We have a pretty clear critter radius around the house. That wasn't the case when we moved out here.

Turkeys talk a lot of until one of them gets eaten feathers and all.

Groundhog Score Card first year we lived out here:

Red Pit: 7 (two of these weighed more than she does)
Lab: 2 (she's a bit bigger so, it's just a groundhog. )
White Dog: 1 (He caught it. The groundhog bit him. He yarked. The Red dog then murdered it)
Daughter: 1 (The Red dog mauled it and my daughter smashed its head with a big rock to put it out its misery) (I gave this kill to my daughter because well... holy , she was cold about it. )

I haven't seen a groundhog within a quarter-mile of the house in 2 years. She's a killer. lol She grabs hold of them and shakes them until she hears them snap.

The first time our younger Cocker Spaniel, (keep in mind these are bird dogs), ran up to the toms, he saw how big they are, stopped, piddled, and ran away. He’s not chasing them again. The older dog does not try to charge and flush them since they will not run or fly, but at least she barks at them to get off the lawn as they mostly ignore her.
I suppose I could grab a turkey and break it’s neck next time they are blocking traffic by our house. If I did not get seriously clawed, it might make an impression almost as effective as your pit bull.

Our Sears grill probably is not tall enough for a spit for a Turkey unless the lid is left open. It arrived new in an IKEA like condition, but once assembled, the stainless construction has been durable.

How would y’all cook a wild turkey? The best turkey I have had in a long time was smoked, closely followed by a glazed ham.

Wild turkey = deep-fried almost every time. You don't have to play the greasy vs. dry roulette.

You can get decent, sharp swords online from various websites, or just use a baseball bat or 3-iron golf club. No need to sully yourself over it.

I am not using my golf clubs for anything else. I used to hit a birdie on occasion. It might be worth a try.
Or, I can see it now, “honestly game occifer, the kids and me was just playing baseball and the bat slipped. It’s a tragedy the turkey’s thick skull was in the way. I done put him him the freezer to prevent brain swelling.”

Ok, new recipe today for brioche bread, I exchanged the sugar for honey and added a third stick of butter.

Brioche dough needs to rise in the fridge for about twelve hours i’m being told, so i made the dough saturday, stuffed it in the fridge overnight and made the bread today.

I made some brioche buns to start. I made some smash burgers to put on these buns. This is after proofing all night, then being deflated and making buns. 100 grams each.

After proofing and then baking.

With the second half of the dough I made another loaf of bread.

The honey worked great, still a hint of sweetness, but no discernible cane sugar taste. The extra stick of butter gives the bread a more pronounced buttery flavor. turned out excellent.
