I've seen several parts that say they are for up to '03, will all of these work with an '04?

What parts? I would think they would because nothing really changed for 03 to 04.

at first just simple stuff, K&N or Steeda CAI, Steeda cat-back, Tri-ax shifter. Depends on what my service department is cool with.

all that stuff will fit on an 04 that is for an 03, and the service department should be cool with all that stuff, none of it should void your warrenty

Don't let the service dept intimidate you...it is, after all, your car. Of course, you don't wanna piss 'em off either.
My wife took her 01 GT in to the local Ford dealership service dept because of a tiny oil leak near the harmonic balancer. At the time, her GT had a C&L MAF, Nitto DRs, D&D LCAs, BBK off-road H into Flows then dumps, etc. They swapped the harmonic balancer without blinking. Of course, they may treat me differently 'cause she's cute and I'm not, so I let her deal with the service manager or service techs all the time!
