As long as the printed word ... FRONT ... was placed on the front of each side
of the block ... you are good to go.
With a lot of the head gaskets you find ......
It can appear as you are installing one of them upside down

Try and taking out the coolant sensor behind the distibutor on the lower intake then fill until coolant starts to come out the hole put sealant on the sensor and put back in This method worked for me.
I've had good luck countless times jacking the front driver's side up (making the radiator neck the highest point) and then running the car w/ the cap off, squeezing the upper radiator hose to get the bubbles out.
If there is nothing installed incorrectly, watch the overflow and fill it up to work the bubbles out over time.
Be cautious if you try it, moving belt, hot fluid etc.
The defrost thing is because there is no vacuum being supplied to the hvac. There is a thin, black tube that goes into the firewall around the heater hoses, follow it behind the intake and to the vacuum tee beside the brake booster. The line is likely broken or disconnected.

Look at the front corners of the block, where the head and the block meet.
If you can see the headgasket sticking out, your brother installed it correctly. If you cannot see it, the headgasket was put on backwards.
If that does not help, ask your brother if the front or back coolant passages were blocked when he installed the headgaskets. The fronts should be blocked and the rear are supposed to be open.
About the thermostat, the spring faces into the intake manifold.
Check these things first, and then do the burping procedure as stated if they all check out.
So check headgasket orientation and thermostat position
I do know that the tabs were at the front of the engine as we took pictures through out the build but none of just the headgasket on I only have after head but before intake and you can see the tabs at the front.
If I understand what you are saying .................
The tabs are at the front of the motor
If that is so ...............
Then just follow the wise advise given by those above

First, imagine it with the intake on.
The corners to look at are on the outside of the engines. Not on the inside where the intake sits.
Look on the outside front of the block, where the head meets. The headgasket should be protruding out.

Get a confirmation about the headgasket protruding first. I am going off memory, so hopefully someone will confirm what I stated.
