I decided to give up the car show stuff and concentrate more on drag racing which involved much of the parts Ive bought for the car this past winter/spring as it now sits in the shop getting the install done.

Realisticlly I should be running mid to low 12's I don't expect 11's unless this combo really wakes my motor up. The thing is I want to run at FFW this Aug but Ive never done this before as in competition just doing test and and street nights. My car should have anywhere from 370-390 RWHP and I'll be running MT DR's. According to this link which class would I best fit in?

Are you going to get any shake down passes in before the event? I think you'll be surprised that you will be nipping at 11s before you know it. I think Street Stang would be a good category for you as the entry fee is 85 bones and its just about where your car will be (I think it will be faster then that with seat time).

Street Stang is your best bet. But in addition to the $85 dollar entry you will have to pay a $35 membership fee because Street Stang is a show-down class. 2 qualifying passes on Friday and 2 on Saturday with eliminations on Sunday.
