I bought an 89 mustang and everything was removed and I’m trying to figure out the dash wiring anyone know where I can find a layout of where everything goes ?
EVTM's are good but I'm a firm believer in factory wiring diagrams. I've built many cars from the ground up and these things are invaluable! These were used by factory Ford techs in dealerships. They're specific to each car and detail every circuit in the car. They cost a bit more than an EVTM but well worth it. Money well spent!

sorry for the crappy resolution but if you do a search for American Autowire from LMR, they have pretty good drawings of the dash harness connectors. Ive used this to referrence my 89 wiring that was hacked up.
