I lowered my seat pans and wasn't completely satisfied. Then I made some extenders that set my seat back 2 more inches--I love it now. I can hit the clutch easily and my arms are fully extended to the steering wheel (kind of like a european car.) It is a little harder to reach for switches or the radio dial--no big whoop.
I can even wear a helmet! (I'm 6'3)
The folks at work get a kick out of me in the Stang because the say it looks like a short little kid drives it.
