Single vrs dual master cylinder...

What exactly is the difference in performance if any? Does the simple act of changing from single to dual make a difference in how well it stops?

Its a safety issue, not a performance issue. If one side of a dual-cyl MC fails, the other reservior is still available to power 1/2 of the brakes.
