Smoking oil after head gasket install

Hey, I just replaced my headgaskets on my 88 gt because of coolant loss. The repair went without any problems. I changed the head, intake and all upper engine gaskets. I also changed the oil with 20w-50 (which is what I've been using in the summer without any problems). After about 20 min of driving, I noticed that the car was smoking blue, which i know is oil. I looked at my pressure gauge and noticed that at idle the pressure goes almost to zero, what could this be? Is it because the oil is too thick for the winter? Is it because my rings are gone, and if yes why all of a sudden after the install?? PLEASE HELP ME!!
