Tune Advice

I just purchased a gear kit from American Muscle, comprising of 4.10s, bearing/gear oil kit, and an SCT SF3 (Xcal3) tuner. I went ahead and ordered the custom 93 octane tune for the Bullitt and installed it.

Which leads me to my question. I've noticed that the parameters don't include any changes to: Global spark adj, WOT a/f, etc .etc. What I'm wondering is, are there any ajustments I can do to the spark/air/fuel settings, in the various RPMs even, that will grant me more hp (quicker times at the strip)? I'm running pretty much a stock 4.6L with new Motocraft plugs, Mac o/r and flows. Any advice?

I'd really like to understand how to tune these cars better b/c my knowledge of EFI is really limited. I'm not a total noob to the game but is there any sources out there that are a good read for beginners?

I ordered a similar pacakge from AM a few years ago. I got a 91 and a 93 tune from them. When I ran the 93 tune at the track, the results were not any better than the 91 octane tune. I tried making some adjustments with the 91 tune, like advancing the timing, but it also didn't seem to make any difference in track #'s.
 
When you take a look at the adjustable parameters on the handheld, they are displayed in relation to the changes already made by the tuner in the base tune. If you make changes on the handheld to global spark, afr, etc., you are changing them relative to what Nick at American Muscle already changed.
