Undercoating & Rustproofing?

I live on a barrier island in NC about a block from the Atlantic Ocean. We get a lot of salt spray and mist that basically destroys anything made of steel that is left outdoors and unprotected. Our cars are parked underneath our house which is on 14 foot wood pilings. After looking at the undersides of my present vehicles, we plan to enclose the two sides and back of our house to try to cut down on as much of the salt spray/mist as possible. I am also strongly considering having some sort of rust proofing or undercoating applied to the underside of my 2007 GT shortly after it arrives.
Some questions:
-Does undercoating or rust proofing provide any real protection? I ask because I remember a day when new car dealers tried to use these dealer installed options (along with things like paint sealant and pin stripes) to drive up the delivered price of a car but they didn't really add any measure of protection.
-If I have undercoating applied, do I run the risk of sealing in moisture or salt spray and just making the problem worse?
-Does anyone have any info or experience with Ziebart? Is their treatment any good? Their closest Ziebart franchise is several hundred miles away, but I'd be willing to make the trip if it was worth the effort.
-What about the aerosol products available from manufacturers like 3M and Duplicolor?
-Does anyone have any recommendations for other commercially applied treatments?

POR-15 + foam brushes + food handlers plastic gloves = nicely protected underside

I can't find one anywhere in NC. It looks like the closest one is in Virginia, up around DC.
