I've heard these are a great, easy way to get HP out of newer cars, but with my car only having 3 pulleys (crank, water pump, and alternator), would I get any gain? or would I loose too much water pressure or volts?

you won't see much of a gain from them on your car, and your concerns are well founded especialy on a driver.
