I got a 180* at NAPA for like $5. Since my radiator isn't cooling that great the T-stat didn't help me in anyway. When I first start out, it delays it for a few minutes getting to 190 or so but since my car runs near 210 it's just gonna stay open like the stock one did and not really have any effect. If my car actually ran cooler than what the stock one did then it might help, lol. Don't know if it'll help you if your running that hot really but it's worth a shot I guess for $5 and an 89cent gasket.
I'd get a Mr Gasket (or RS or any other performance-oriented stat) instead. They're usually 10 bucks at speed shops or less than 9 at Summit if you're placing an order already.
I live in the desert so I'm kinda anal about this stuff (read you might not need the benefits of a balanced, perf. stat).
