Which O2 sensor?

I was looking on Autozone's website and they list a Bosch OE type for 65 and a Bosch Universal for 60. They also list a BECK_ARNLEY
UNIVERSAL - 4 WIRE (CONTAINS SPLICE KIT) for 90. How much of a difference is there? I don't mind spending more to get something better?

Also, the previous owner removed the Cats from my car, so do I even need the 2nd O2 sensor that's located after the Cats?
 
The Bosch is a pretty good unit itself,personally I wouldn't spend the extra and those "universal" ones almost never fit anyways. Depending on what the previous owner did to deal with the rear cats you might need to keep them hooked up. If it was electronically done then it won't matter,if he's using MIL eliminators then you should keep them connected.
