I'm rebuilding the 289 from my Mustang and I was ready to buy a flywheel when I noticed that the flywheel it came with has 160 teeth. I'm looking to get something lighter but which should I buy the 157 or 162? Can you just switch if you get a different starter?

Actually the 157 IS the 160. The 164 is the 68-up larger wheel. Ford changed the early wheel, replacing the 160T gear with a 157T gear.

So if I get the 157 it should trade right in then? What would it take to go to the 164T, is there any ups or downs?

No advantage to the 164, and you'd have to replace your flywheel and engine cover to use it.
