Should the upper control arm on a 1972 Mustang be replaced as I believe the arm is the original? If replacing the upper control arm should the coil spring and spring seat also be replaced?

The upper control arm, upper ball joint, and spring perch are all a good idea. If the front coil springs are weak or sagging, then yes to those. Remember, the springs are replaced in pairs.
