Hey my roommate just bought a parts truck for his highboy f150 and it has a windsor. I'm not going to do it now but put it on a stand and use it for the next build but I'm kind of undecided. I think if I put some nice heads on a 302 I won't be adding weight but then again there is no substitute for cubic inches and its free. Opinions.
351W or 302?

I'd take the 351. In the long run its easier to make more power out of it than the smaller block. Plus telling people you're running a nice 351 Windsor is always fun.

More cubes=more power
simple as that. Definantly go with the windsor you can build those to fly a lot easier than a 302. With a 302 you may have to pay for stroker too.
