56000 mile long block What to do, What to do?????

I stumbled upon a stock 5.0L out of a 93GT that had 56000 original miles.(rear end hit totalled car). Anyhoo, I just rebuilt mine less than 500 miles ago and am not in any hurry to drop this one in and was curious as to what I should do with this one.
A little info:
I just put Holley systemax II kit on my car when I rebuilt it. so that will be what goes on this one.
I already have DSS promax forged pistons/rods/crank in the bottom end I have now. But they are replaceable if need be.
All I am looking for is good reliable build on the bottom end (stroker preferred.)
Any ideas would be appreciated. I am leaning towards a 331/327 depending on condition of cyl walls in the new motor.
I may just want to make this motor as sick as possible naturally aspirated.
Let me know what is in ya'lls heads.
I will entertain anything mild to wild.
 
I think you should put it on the stand and build it up as time and money permits. That's what I've been doing for about a year now.
OR
It's never a bad thing to have a spare motor just waiting should something happen to your current one. Make sure you bag it up to keep out moisture and dirt...PB
