93 Mustang

The one in the dash is usually all the way towards the top and the aftermarket water temp one I have is like 210-230F.

I have 2 dual fans in the front aswell

Normal range for AFR I believe is between 11.x-14.x. Your temps shouldn't exceed 200* IMO. What temp thermostat do you have installed? What temp do you have your fans setup to turn on at? What fan controller?
 
I would think 210 would be the hot side of normal. Anything over that and you have cooling issues. 230 is definitely pushing your safety net.
 
Jack the front of the car up so the radiator cap is the highest point. Turn on the heater and remove the rad cap. Start the car and let it run. When the thermostat opens any air trapped inside will be forced to move upwards and exit out the cap. Keep an b eye on your engine temps.

Ok I will try that and one thing I noticed in my engine bay is lots of white splash marks, seems to be some sort of oil ? There is no leaks or anything but I was warming it up and revved to like 5000-6000 rpm? Where could that came form
