new thermostat? try it w/out the thermostat, maybe it's
sticking. how old is your water pump? it could be going bad.

When does it overheat? At speed or while idling?
How hot is it getting?

is it remotely possible that the water pump is for a non serpentine system & therefore would be spinning backwards & not pushing water? or possible that temp sending unit could be bad? might sound like stupid ??? but just trying to help.

If the gauge reads hot so quickly that it doesn't seem possible, consider that there's air in the system.

Is the fluid level dropping in the overflow tank? If so, you may have a bad gasket or hose somewhere. Did you pull the engine out? Check the block to body ground strap. I broke my strap during an engine swap and had all sorts of strange readings before I added a new ground strap.
