94 mustang gt kinda starts

Alright i got a 94 5.0 that when full throttle would cut out like crazy then it started to not run at all, changed the MAF sensor and ran fine for one quick trip to the store. Get home and now will crank over and sputter like crazy like it has a huge cam in it push the throttle and instantly dies. Already gutted the cats as well. No CEL comes on.

Welcome to stangnet.
i don't understand why people still think those cats are a problem but it's done, now as to the problem at hand, make sure your plugs, wires, cap and rotor are in good shape, don't forget the fuel filter. Check for codes, they can be present even though the cel is not on. Also check fuel pressure.
There is a technical/how to thread on the main 5.0 tech page find the 'cranks but no start checklist' go through it step by step, the 94-5 stuff is highlighted.

Has the car been sitting for awhile, sounds like a fuel issue. Could be fouling out plugs which would make it sound like a cam (not firing on all cylinders).

No CE lights is bad, would have been great for a code to point out the area that's the issue.

We'd need more information on the vehicle, maybe a video, etc. in order to help troubleshoot.

You can get stored codes that can give you a clue as to the problem, so running a KOEO test to get any stored codes is worth the effort. Also, let's just make sure - the CEL should come on when you start the car, just for a little bit. It's a safety feature to show that the CEL is still working.

You might want to check the wiring that leads to the MAF. Maybe you plugged it all back together, but the connector didn't actually click together all the way? It could have worked its way loose. Follow the MAF wiring back to the sheetmetal, there should be a connector that joins the MAF & ACT wiring to the main harness.
