Ok It looks like the gremlin came back.

The compressor will not spin, but is right on target as far as freon goes.

If I jump the low-pressure switch, all is fine, the compressor spins, and cool air starts to flow. Removing the jumper wire will kill the cool air and spinning of the ac compressor.

With all this in mind, could this just an issue with the low side switch? Would there be any issues running this in a jumped fashion until I can figure this out?

Replace the switch. The potential exists for the compressor and associated parts to freeze over (that's bad). Then you'll be in a mell of a hess.

If it's the one on the accumulator (and I'm relatively sure that it is) then no. There's a seal in there that will seat once you remove the switch. There is always the possibility that the seal is bad but mine is an 86 and this wasn't the case.

I am having the same problem, but I don't know squat about A/C's. Where is the low pressure switch located?

replace the switch, if you leave it jumped the evaporator will begin to let liquid into the compressor and slug it therefore destroying it.

Just unscrew it from the dryer, the black cannister by the passenger firewall. It has a schrader valve just like tire valves and you should not loose any freon. Mine is stuck in the closed position I think since mine will freeze up and I have to keep turning to vent and let it defrost.
