If you feel like searching, you will find volumes (I say that not to be a turd, but if you are itching to get these in, you can start sooner).
Srothfuss did a pretty nice write up on installing some gauges a while back. A search of threads he started could be helpful.
WHere are you mounting the gauges? That often determines where one taps power.
For lighting, you can tap into fuse 13 or a dimmed display (for the HVAC, etc).
For OP sending unit, you can make a Tee fitting and keep the stocker. Stock pipe is 1/4" NPT and most aftermarket stuff is 1/8" NPT.
For water temp, I would relocate the stock sender somewhere else (rear of the lower intake, t-stat housing, etc) and put the AM gauge's sender in the stock location (that location is hard to beat).
