I painted my stock calipers GLOSS BLACK and edged the rusty parts of the rotor that do not touch the brake pad. Turned out nice, so once it comes time for me to get new brakepads, Ill just upgrade to the Bullitts with the 13in rotors.

My friend has an '01 bullitt and the paint on his factory calipers peeled off. We went to Ford and bought a bottle of touch-up paint for the calipers. It's just "Cardinal Red" high-temp paint. Paint flakes were just peeling off. The rears peeled more than the front but it's definitely paint.
Paint peeling from Bullitt calipers is actually pretty common.
