Blown Headgasket?

My car will randomly start surging when I am driving it, but today it was finally hot enough to put on the AC. I noticed that when I sit in my driveway with the AC full blast, if i rev my engine it will go up then dip down to 500rpms and almost die...and then go back up to idle. It does this even when I am driving, it seems all the vacuum lines are connected...but also I noticed when I was revving it that white smoke was coming out of my tailpipes....it seemed to be smoke atleast I dont think it was dust.

What is a way I can tell for sure?
 
Pull the heads and look:D j/k. You can test the coolant pressure or content with chemical strips. Or if coolant is dripping from your exhaust. Or if your oil turned to baby crap.
 
Buy a compression tester at you local autoparts store, if one or more cylinders are way down compared to the others then for sure you blew a head gasket. When I blew one a few months ago, two cylinders read ~80psi while the rest were right at 150psi. Dont forget to disconnect the ignition coil and the fuel pump (I have a kill switch wired in for mine) when you do it.
 
The idle jumping up and down sounds more like the IAC. Take it off and clean it with some carb cleaner. Does the car miss or anything? If it was a blown head gasket it would do it all the time.How many miles are on the motor. Maybe bad valve guides or something like that.
 
The motor has 122K on it, it seems like it has a miss when I am really getting on it in the upper RPM's...might be hessitation. If it is a head gasket I am going to be happy because then I can pull the heads and replace them, I just don't want to pull them if I don't have to.
