Not just in cold weather. It was 48 degrees today and the car took a good 7-10 mins of NORMAL DRIVING for the needle to even move off of the C mark. What gives????

Sometimes that means that the thermostat is stuck open for some reason. I know that happened to me because part of it broke and it wouldn't open nor close fully

48 is cold IMO.

Mine takes a while too, usually about 10-15 minutes in similiar weather.

7~10 min seem normal to me. If thermostat is stuck open, I would think it takes heck of a lot more then 7~10 min to worm up if worm up at all.
when thermostat on my MR2 stuck open, it took like 20 min of idlein' for needle to move at all, but then as soon as you move, needle went down. But mine was compleatly stuck open tho..

I let it idle for a few minutes because i have to play schuffle board with the snowblower which has no place besides behind my car in the garage so i have to move and replace every time i take out the car.
After the two minute idle i start driving. Im halfway to my girlfriends house before the needle is off of the C mark. and she lives 20 mins away.

maybe its normal

try to replace the thermostat with a stock replacement from like AUtozone or even the Ford garage. its only two bolts and a rubber gasket.
