my 95 GT has recently gotten very jumpy when driving....its almost like its running out of gas and jumping forward and then losing its power but its constant....what could this be?

Sounds like a vacuum leak. Look for anything obvious in the engine bay, if that doesn't work, spray some carb cleaner or something around.

my car does that when the timing is advanced to far. It'll accelerate fine but at a low rpm cruise it'll jump

Mine does the same thing when I try to bump the timing up any at all. If I keep it at 8 deg. or less or run without the spout at 20 deg. it does fine. I know I'm leaving a lot of power on the table by running it this way, but I can't find the problem.

Mine acted that way once. I ended up replacing the TPS. Found a dead spot in the original TPS using a Digi Volt Meter.

Gotta be something with your fuel then, maybe. Your fuel filter is prob clogged. Have you ever changed it before and how many miles do you have?
