Okay so I been finally tinkering around with this thing trying to get it to run right. Before the car would only pull like 5 inches of vacuum at idle and run like crap. I now got the car up to 8-10 inches of vacuum at about 1k rpm. It seems to run a lot better when I give it throttle and will shoot to 22 on decel and all.

The carb is a Holley 600 DP with mechanical secondaries. It has a manual lever choke on it, and when its all warmed up and I close it, it dies instantly. The carb was completely rebuilt so I don't think there is anything wrong with anything inside at all. Any idea what could be causing this? Im new to carbs so not real familiar with what to look for based off these symptoms.

Yes, it's supposed to do that. you are closing off all the air to the engine when you do that. The choke is for cold starting. Manual choke carbs are tough to use imho, you can get electric choke kits for those to make cold starting/warm up much easier.
