Cooling issues... car won't heat up, but Tstat and Rad are new.

Put a 195 degree stat in and make sure there are no air pockets in the system. I usually let the radiator cap off until the stat opens and makes a bit of a mess. The 180 degree stat is really not helping much for heat. If you have an aftermarket aluminum rediator I would stick with a 195 stat. I never seen any bad things happen with a 195, even on a wildly build engine.
