Very good pic!! And you're absolutely right about people just throwing cams in and calling it a day.
Now if you look closely at that pic, you will see that the deepest part of the reliefs is in outside the inner diameter of the flat on the piston, or atleast it's line-on-line. And that particular piston's flat area looks to be a bit on the small side....maybe 8mm. Most are approx. 10mm, but if you want to get more cc's out of the dish, you need to open up the dish diameter a bit. That one looks like a 23 cc's or something north of 20 cc's.
Again though, if you're building a race engine, and you need some super-aggressive cam timing, then yes, you'll need some reliefs. But for street use, it's not necessary at all.
