Went to the dyno yesterday for a couple baseline runs. The car dyno'd at 228 and 269. That's about what I expected for a 2001 GT w/Steeda cat back and BBK cai. I was thinking my next mod would be an SLP o/r X pipe and then nitrous. How do you guys think that combo would sound?
If your numbers are SAE-corrected, then your experience would be a testament to the fact that CAIs and catbacks don't do much for our cars. See my stock dyno numbers in my sig for a baseline comparison:

Those numbers aren't too bad. With just a 70m throttle body, a Bassani cat back and a cai I put down 241rwhp/ 279rwtq. I think that your car would sound pretty good.
